Black Bean Fajitas

I'm going to try it on my family this weekend.....
Black Bean Fajitas

2 green bell peppers, cut into strips
1 onion, cut into strips
4 oz sliced mushrooms
1 cup frozen corn
1 can black beans, rinsed and drained
1 fajita seasoning packet + 1/4 cup water
2 cups cooked brown rice
guacamole
salsa, sour cream, and cheese if desired

Cook brown rice as directed. In a large skillet heat 1-2 Tbsp. olive oil and saute vegetables until tender crisp. Add black beans. Combine fajita seasoning mix with 1/4 cup of water. Add to cooked vegetables. Stir and cook until most of the liquid is absorbed.

Assemble however you like on the tortillas and enjoy! I think the next time I make these I might even just opt to eat them as a burrito bowl with a bit of extra rice!

My Fortune

I was feeling adventurous Wednesday and took all 3 kids to chinese by myself for a late lunch.  They did better than I expected them too.  We had a good meal, I was able to relax and enjoy my kids. Something I don't feel like I get to do much anymore, we got our bill and fortune cookies and mine put a big smile on my face.

"Work on improving your exercise routine." how fitting for me now, I haven't been getting much sleep lately, mostly stress, and my left side of my nose wont lent me breath, but thats another story.  Anyway I haven't had the motivation to exercise. Guess the universe is telling me to get out there, you have to believe a cookie after all!

Dinner time

I need something new to cook!! I have been trying to cook healthier things, but they don't taste that great, I want something with flavor!!! Any suggestions, I also need it to be kid friendly. The kids have become picky again. They go through food stages, and now its nuggest, fruit cups, and chocolate milk, and we have started the pop sickles up all ready..

PLEASE HELP ME, "whats for dinner"

Walking

The past two days have been so nice here. I got a new stroller a few weeks ago, its one of those sit and stand ones, so Trevor can sit or stand while Eli is in the front enjoying his first real sun....the boys and I have walked a lot this week while Taylor is at school, we even went for a good long family walk on Sunday evening.  

My goal is to walk every day, as long as it is nice, and get my body use to moving more.  There is a 24/7 gym down the street from me, and I have been thinking about looking into a membership. I think I will, but maybe towards the end of summer, when its getting more fallish.

Welcome!

A friend put on her blog that she had just started the "South Beach Diet", and I mentioned to her that we should a do biggest looser kind of a blog to help support and motivate each other.  She said that I should do it.  

My goal is for all our friends, mothers, sisters, who ever to follow this blog and help motivate each other to get healthy, and yes loose those lbs. we all have hanging around.  Add healthy recipes, exercise tips, and only good thoughts.

So to all woman, lets be sisters and help one another.  I will try to add all comments onto the blog so we don't have to take time clicking on every entry.

Start with 10 minutes a day taking care of you, that does not include a shower. Take a walk with your kids, heck get a jump rope and start slow....
